rtx 3070 and egpu performance loss

Hey guys, I am new to this forum. This may be a repeated question, but I couldn't find all the answers to my questions, so any kind of help would be appreciated.

Questions:

1) Is it true that higher-performing cards have a greater percentage loss? If so, why is that?

2) Is it true that egpu setups have less fps loss if played at a higher resolution. Also, why is that?

3) How much performance loss should I expect from my rtx 3070 setup? I have the base model 2019 16 inch macbook pro which has 2.6 GHz Intel Core i7 6-Core (9th Gen) with 16gb of ram. The games that I would like to play are Flight sim, Assasins creed, etc. I also would love to play them at wqhd resolution (3440 x 1440). Where can I find game benchmarks similar to my setup? Thanks so much for the help
