Crashing during graphics intensive tasks when second monitor is connected

A bit of an annoying situation; I use a 1440p monitor as my main display and recently added a 4k monitor as a secondary display. Soon after I started getting a freeze and logout or freeze and crash when testing out a Unity game I'm working on.

I typically test the game on the 1440p monitor; I have verified its not the games fault, and have tested disabling all other programs, however the crash happens almost every time the game is run unless the 4k monitor is switched off. If its switched off there is no crash.

I'm not sure if this is a situation any one else has run into, its a major pain because while most of the time the crash happens during game testing, sometimes it just happens randomly when using the unity editor, or other graphics heavy programs such as Davinci Resolve. Its a bit ridiculous having to turn off one of my screens every time I start a large program!

Currently on MacOS 11.6

Edit: Additional note, I tried running the game in a Parallels Windows 10 VM, while the computer did not outright crash, both screens became garbled, and had a checkerboard of pink squares across them that could not be removed without restarting.

Update! I saw a few posts saying the 12.0.1 Montery had good results for eGPUs, so I decided to install it! It seems to have fixed the crash, or at least helped with it. The computer will freeze for a moment but it will recover instead of crashing. It also feels significantly faster.
