Unable to get Mst DP working on OSX. Trying to get 8K resolution at 60hz

I have a Radeon WX9100 in a eGPU with 2 DP1.4 cables going to my Dell UP3218K monitor. When both cable are plugged into the monitor, my MacBook Pro OSX sees it as 2 separate monitors at 4K each. MST DP should at least be seeing it as one monitor at minimum of 5K at 60hz. When I plug my Microsoft Surface into the eGPU, it shows works correctly (8K at 60hz).

Apple says they only support 3 models of monitors for 5K resolution. I saw a hack somewhere a few months ago that you could add monitors to some sort of plist but I can't find that anymore. Any ideas or hacks?

Does the eGPU work in Windows? Does it support 8K60Hz in Windows?

The Dell UltraSharp 32 8K Monitor - UP3218K Troubleshooting Guide mentions that you can use a single cable to get 7680 x 4320 @ 30Hz. Does that work in Windows and macOS?

I have a few questions about that (for Windows and macOS):
1) Can it support 5K over a single cable? What is the max refresh rate at 5K with a single cable?
2) Can it support 4K over a single cable? What is the max refresh rate at 4K with a single cable?
3) Can it support 4K and 5K at higher refresh rates with two cables? (For Windows only, since you can't get dual DP to work in macOS)

Yes. Works great on my Dell laptop and I get a max 8K 60Hz.

That was fast. I updated my questions in case you missed it.

1) Can it support 5K over a single cable? What is the max refresh rate at 5K with a single cable?
No. The max resolution is 4K at 60hz on my Mac. 5K is only possible over dual DP on their "supported LG monitors" according the apple support. Only in WindowsI was able to get any resolution higher than 4K 60hz
2) Can it support 4K over a single cable? What is the max refresh rate at 4K with a single cable?
Yes in Mojave and Windows 10. 60Hz is the max I get.
3) Can it support 4K and 5K at higher refresh rates with two cables? (For Windows only, since you can't get dual DP to work in macOS)
In windows, I get full functionality and full refresh rates up to 60Hz. Mac does not
recognize the dual DP configuration unless its connected to a LG 5K monitor.

There has to be a plist somewhere that I can add the monitor model number...

There are other displays (Dell and HP) supporting DisplayPort 1.2 dual link SST that work with macOS:
https://support.apple.com/en-ca/HT206587
I think there are more. I have the Dell UP2715K.

The Tile information in the DisplayID (or EDID?) should be sufficient for AMD graphics in macOS. The macOS Nvidia drivers were hard coded to work only with the Dell UP2715K.

You say in Windows that you were able to get resolutions higher than 4K 60Hz. This was over a single cable? Was one of those resolutions 5K 60Hz? What about 8K 30Hz?
