eGPU setup with Macbook Pro 13-inch (mid-2012) + Win 10 + iRacing?

I have a Macbook Pro 13" 2012 (2.9 mhz intel, non-retina, the one sold until 2016) with maxed out RAM/SSD running MacOS Catalina (10.15) and Windows 10 via Boot Camp.

I dusted off an old Logitech wheel and want to do some iRacing (sim racing) during the COVID lockdown(s). Otherwise, I do no gaming/editing. My old Win tower from 4 years ago is dead.

I'm looking to spend < $300 USD or so.

I do not need to run max graphics on everything, I just need to get the frame rate up (currently have it running... integrated Intel graphics give ~25-30 FPS driving a single external monitor, preferably 1080, but can go down). Anything above "minimum settings" is gravy, IMO.

Built my own PC a long time ago, but no peripheral exp. in quite a while. Not looking for anything intense, this may just be a pet project while stuck at home. Plug and play strongly preferable, although I'm willing to mess around a *bit* on the software side. *Slightly* prefer something that works on both Mac + Windows side, but honestly, only really care about the Windows side.

What is my strategy here? Find an old Akitio Thunder2 + cheap card and go Laptop -> Thunder2 -> monitor? Or are there better options?

To do: Create my signature with system and expected eGPU configuration information to give context to my posts. I have no builds.

@jorgethetalkinggoat, AKiTiO Thunder2 with an RX 470/570 is probably a possible setup for your budget.
